You could (i know you probley dont want to) try taking the server offline for a few hours to see if they give up and go somewhere else

It happened to us once, service provider assisted...

We have a full cabinet in their co-lo facility so they were on it pretty fast :-)

Got wireshark to dump a list of ip's by going to statistics - endpoints. Sort by packets and you'll get an idea of what you'll need to block.

I would suggest getting a Cisco ASA and set it up to only allow the specific service you are using through. i.e. port 80, 443, 22 or whatever.
