So im looking at getting a 1/4 thread plug Temp Sensor, and was wondering what do i use or need to read the signal from the Sensor? eg. Like a Koolance Pump / Fan / flow metre controller?

There are many different type of sensors with different specifications, you need to make sure your fan controller has the same K ohm rating, for example 10k ohm or 50k ohm sensors. Most newer type sensors are 10k ohms rating so make sure your controller is 10k ohms! It would help if we knew what fan controller you own.

There is a problem, the only water temp sensor that is sold at the online store you linked sells only the Coolant Temperature Sensor Plug, 50K Ohm version. Koolance sells a 10K Ohm version and after exhaustibly reading the manual there is only one way to find out which sensor is right for your Koolance CTR-CD12 controller, you need to contact Koolance directly! There is simply no information on Koolance's website as to which sensor is the correct one.

Seems like the best option, to contact Koolance directly. Thanks for the info.
Though what would happen if i was to have different Ohm's between Sensor and Controller?

If you read the description for the sensors on the Koolance site, they tell you what devices they are for. 50K for older versions, pre 2011, 10 K for newer.
