I recently bought the DA:BE because I have sweaty hands and let me just tell you that from experience it is near impossible to get a good grip on Black edition. Although it's very sweat resistant. Personally, I would just go with the Normal DA even though you hands may sweat on the side of the mouse, you can get a much better grip on it.

I suggest you take a look at the Razer Taipan. It has a none sweaty surface and has grips on the side of the mouse. Not sure how good the sensor is, but I think it uses the same sensor as the new Mamba. Although it is quite expensive.

I would suggest the rat 7. I had problems with sweaty hands before; this mouse is always dry.
