Do you have any idea why exactly this Shimian listing has "Macbook Pro" in the title? The monitor appears to have an VGA port.

Regarding the adapters... will something like this work? http://www.ebay.ca/itm/Mini-Displayport-DP-DVI-I-Dual-Link-Adapter-Cable-Apple-MacBook-Pro-Air-/310408863925?pt=LH_DefaultDomain_0&hash=item4845cf60b5#ht_5345wt_1115

What if I use my HDMI port on my Macbook Pro Retina to connect to the HDMI port on these monitors?! Will that work?

I would put the money towards the Microcenter monitor or the Nixeus because they have DisplayPort input, meaning that you can use a Mini-DP to DP cable to connect the monitor. This way you pay around same as a "Korean" + Dual-Link adapter but you get a monitor that is available locally and has more ports.

Good to know thumb.gif so displayport doesn't support 1440p over dvi/hdmi without the help of something that takes the displayport signal and re-images it into a dual link dvi signal?

Neither of those ways will work with a non hdmi model of these monitors. The HDMI will work with the Catleap Multi model in windows but its not confirmed to work in OSx sadly you would be the first person to try this.
