Unless you're trying to cool down like triple SLI/CF, CPU, MOBO and HDD's, any 480 will do. It's up to what you prefer basically, including noise vs performance dilemmas. Straight watercooling don't have the capacity to lower temps under ambient anyway.

I've used the RX480 alone on a Q9550 @ 4gHz/1.38V and most of the time I could even run it fans off @ 20C ambient and saw load temps ~65-70C. Rad was mounted way outside the case though.

Dead serious. Give me any 480 radiator and tell us that it won't do its job with ease, seen from a general PC watercooling loop standpoint.

Run it like that for an hour and I bet temps would be higher. Passive radiators simply aren't effective in computer water cooling unless you have massively oversized ones that would need a much stronger pump to run.

Completely depends on the rig and the OC's

And old rig like described, sure, 480 will be fine if used with some kind of fan.

I did whole 4-5hour gaming sessions running passive. Each loop contained over 1L of distilled. Note that the radiators were way outside the case, low to the floor. The setup, cpu loop on one rad, 5870 loop on the other.

A 480 is good for more than most people realize. Take a look at this chart from Skinnee and see how much watt dissipation there is from just a "regular" 360:
