So, my sig rig is in my sig:)

My question is this:

I have the opportunity to get a Corsair AX850 for a pretty cheap price. This one:

My INTERNAL hardware is as follows:
CPU: 2600k @ 4.5GHz (Soon to be 3770K)
GPU: 2x6970. Soon to be 2x7970 GHz Editions (next month)
Motherboard: Maximus V Formula
HDD: 1tb Seagate
SSD: 120GB Vertex 2 (Upgrading to 256GB Samsung next week)
RAM: 8GB 1.25v Sniper Series (upgrading to 1.5v 2x8GB Ripjaws next week)

Plus there's my h100, and a bunch of fans.

Is 850w enough for this?

Yep, it is way more than enough actually.  Even a nice 650W PSU would be enough.  However, I don't know how the power consumption of the 7970 scales when they're overclocked, so I would go in the middle with a nice 750W power supply.

The ax850 is plenty of power for your build using either gpu setup. Your good.

Up to 8 USB devices at any time
