Its really simple. All you need to do is take something with a sharp tip and simply place it below the plastic tabs. Lift the tap individually and gently. As you do this, pull out the wire, gently. This is for the sata connector that is at the end of the wire, ie it has no more sata after this sata connector. If your looking to remove the sata connectors in which the wire passes through one sata connector and then to another, then you need to simply pull the tab at the back of the sata connector. When thats done, you can remove the wire.
I'd post pics, but my camera is busted and my phone is 5 yrs old with crappy pics. Sorry.

Ok. So heres a question. In the pic below, would it be ok to remove that wire (in red) from the pci-e connector and place it into a diff slot on the pci-e connector? Same question applies for 24pin and EPS.

Thanks.
Thanks.

If you are swapping the same connector then sure, otherwise no...
so:
12v -> 12v
5v -> 5v
3.3v -> 3.3v
ground -> ground
And thought I would put this here as it's relevant to the thread.

It's the cpu connector that I would be most worried about length. I forgot how far it is to the top of my Switch! Fortunately my Seasonic 1000 came with a sleeved extension, so I use it from the psu to the side of the case, then plug in my sleeved connector. Even with the case door off you don't see much more than the end of the connector anyway with the way I routed it.
For you guys that sleeve a Seasonic psu and end up destroying the connectors like I did while de-pinning, I posted here about replacement 24/18/10 pin ATX connectors that you can buy either in the US or from modDIY in HK. Antron Electronics is the US supplier for Seasonic and they will accept orders directly from individuals for either white or black connectors. FYI.
I keep wishing some vendor in the US would get in some better crimpers for a reasonable price. I'm not going to tackle another 24 pin until I either find one or break down and order one from MDPC, since they are supposed to be very good. I've had to replace so many wires after crappy crimps else end up with shorter wires.
