I have my 3930k and GTX 580 an a single loop with a ST30 360mm rad and a 120mm rad the water is 7-8C above ambient and my GPU temps are great initally but keep going up about 1c every 2-3min I don't think it is tim becasue that would be right away right?
They will slightly increase over time though as your room gets hotter and hotter if you don't have AC or other means of keeping it at a steady temperature.
A good way of seeing your temps stabilize is by folding on both CPU and GPU and see how your temps evolve after a few hours and keeping your room ventilated.
I was folding on them both, the only thing I changed was to add 2 more gallons of distilled to my loop filling it up again and my temps went up 7-8C from where they were on the GPU but the CPU only went up 1-2C that is what I am concerned about.

I don't know much about watercooling but make sure you have no air in your loop. Maybe the water you added was in a way different than the one you had before... dunno
Maybe a more knowledgeable person in this field can help you better... sorry.
I want a pic, that is a mighty reservoir. your computer must weigh a ton!
And that's probably why you see it climbing so slowly to stabilize. The more water you add the longer it takes to heat it up to a point where the radiators can dissipate all the heat.
But seriously, I'm curious as to where you've added 2 whole gallons of water. Dud that's a lot, I'm lucky if I can fit more than a liter in mine...
