With Nvidia Surround, you can use any of the three ports to use three monitors at once on the GTX 600 series. You do not have to use a DisplayPort adapter.

for triple catleaps you WILL have to have a dp to dl dvi adapter since it only has dl dvi inputs on monitor. so with two 680s. 1 adapter needed and use each dl dvi port on each card, unless the 680 has two dl dvi ports you can do two dl dvi on one card and 1 dl dvi on other.
