Higher polling rate takes more resources, it can actually worsen performance of demanding games on older machines. To be honest there's no advantage of 1000Hz setting, it's a gimmick. In my opinion 500Hz is the highest to consider, probably you won't see difference between 500 and 250Hz. I still use 125Hz for everything except Counter-Strike 1.6 even though my mouse comes with default 1000Hz.

It used to be an issue back in the day, but don't worry, it's peanuts for the CPU's we have now.
