I'm having a hard time to choose which mouse pad would be the best for gaming (FPS) and design work (graphic/web design).

I'm using a Razer Taipan mouse. I would prefer a good size mouse pad.

I'm also wondering if its razer goliathus speed or control?

I would go with Speed. I have one myself, alongside a CM Spawn, and I can't put into words how smooth mouse movement is.

Did you mean the C.M. pad, or was it the Razer?
