Depends how much time is saved... It's pretty easy to save more than 30 seconds in transcoding when you double/quadruple/whatever the hell he's saying the cores.

Wouldn't take longer than 30 seconds to reboot and having the extra 4 pipelines in a quad core would definitely knock much more than that off a decent sized file.

It'd work for me, as I do stuff that wouldn't use 8 cores a fair chunk of the time but I do use 8 cores some of the time, usually in situations where a reboot is a small price to pay; mind you, I'm going for an IB-e 8 core (Assuming they have 8 core K/X editions..) simply because it has the core count, the IPC and (hopefully) the clocks.

you just need to plan your workstation time, thats all, say if you do transcoding on certain days and use your computer on personal time on others, I bet a 2 Module Only Fx at close to 5GHZ is alot more responsive than a 4 module Fx at stock speeds

but on the down side you will not be able to disable 6 cores to run two at 4GHZ...
