The idea behind over specification RAM is it may hinder your OC. Gains from core clock with definitely outweigh performance increases from RAM.
I do recommend starting with 1600mhz RAM and loose timings/low voltage to max what you can get on your CPU.
That doesn't necessarily mean it wont go back up to 2133mhz.
Max all the digi power control to maximize your OC for now, you can tighten it back up later. This will keep the CPU from throttling.
Also, start to up the multi with all voltages at default liek you asked.
Your first BSOD will likely be a 0x101, or 0x124.
