I haven't worked at all with the 1366 platform but that is going to be my next build. I'm making a back up gaming/work rig and plan to put a Corsair 600w PSU into it. It's going to be something along the lines of a 920-960 OC'd as far as it can go safely on the stock cooler, a 560 or 580, 1 HDD 1 SSD. I'm not to sure on the power consumption of 1366 processors or 580s as I was using an AMD build at that time.

I don't see a problem with running a 560 with that setup but a 580 would be pushing it. If you plan to OC your cpu I'd go with a 650 just to be safe. 1366 can draw quite a bit of power when overclocked.

As long as it's a quality PSU, 600 W should be fine for 560-470, and most likely ok with a 480/580.
You probably won't be able to OC too far on stock anyways.
I ran my 470 +950 @ 3.5 ghz on a CX600 W Corsair unit for a few weeks until the unit died (was probably just a faulty unit)

Ive got a 650 watt PSU in mine. This is running an i7 920 at 4ghz and an HD 7950.
What is your reason for going after the 1366 specifically? I assume you must already have a lot of the components sitting around or have access to them very cheap.
