Hyper-V Server 2012 is free and pretty basic, and a great platform for a virtualization host.. With Exchange, you have like 120 days for the eval license, unless you can get your hands on a license. Another option that I have personally used, is hMailServer. hMailServer is much lighter, but less feature packed than Exchange. hMailServer is designed to run on Windows Server, it's free, and works great if your end users have a mail client (since it has no webmail built it; although you can set that up with another program). RoundCube and SquirrelMail are the two webmail clients I have tested before with hMailServer.
As far as VPN support...if your server has the NICs, you could set up a virtual instance of Untangle, which is a firewall based on Debian. It has OpenVPN built in, which is easy to configure/use, and is free.

The MS Server thing is really just to help me get into Uni so it doesn't need to MS Server I'd just like to know what's out there and what you guys think is best but yeah I've got a machine that'll be running Win Server 2008 for my course. I'm looking into running a pFSense firewall on an old machine just now, I've heard good things both on here and elsewhere it also seems to support everything I need (VPN, etc).

The way it works now is that you get an Evaluation Version of Server 2008 which has 120 days on it but that 120 day 'Evaluation period' can be reset 3 times, so you get just over a year out of it but after that the software requires you buy a licence. No more free software frown.gif

I still think a more permanent solution for you is Hyper-V Server 2012 + some sort of *nix. You could also dump ESXi on it if you don't want to wait for Hyper-V Server 2012.
Use the evals to learn about MS systems for your course, but I don't think it would be worth the money you shelling out after the eval in this scenario.

Windows will smoke everything in terms of set up and usability, but in such a simple application as this, it probably will not matter.

You should be able to do it with one physical NIC and two virtual NICs, also providing traffic isn't super high.

I'll have a look into Untangle, I've heard of it before but I've never looked in to it.

The MoBo I'm using (not yet purchased) has 2 NICs but I was thinking about Teaming them? I've got my sights on this CPU as well, I'm pretty sure it has enough power to do all that.

Teaming those NICs would be optional in your scenario - the only advantage I see would be fault tolerance as it doesn't sound like you'll be pushing a truck load of traffic through this server.

Teaming those NICs would be optional in your scenario - the only advantage I see would be fault tolerance as it doesn't sound like you'll be pushing a truck load of traffic through this server.

Sorry I never mentioned it here, (I have this thread already) the server will mainly be file storage, Pictures, HD video and also I'm going to be hosting out iTunes library's on it as well to save space on our actual machines. I'm going to set up a VPN to use when I (hopefully) go to Uni next year, I'll still need access to the files and maybe use it's computing power as well. The email server is for 3 people as I've already said.

Yep, team those NICs. What switch do you have? You might be limited with teaming options... although Hyper-V Server 2012 will have some pretty neat NIC features.
