IMO you don't want to go anywhere near 80 degrees of 24/7 use, when i have IBT on maximum, my 3570k @ 4.5ghz i tend to not want my cpu to go above 75 degrees. Being rational i know my cpu won't be at those temps anywhere near half the time.
And as for that i'm not going to touch on 'what is safe' and 'what isn't' for cpu voltage as it pretty much is deemed 'safe' by the overclocker. Generally, the voltage change reflects on the temperature, otherwise those temps AND voltage seem fine for 24/7 use.
Memory overclock i've never been to fond of, pre sandy bridge maybe it would of had a big impact, post sandy bridge it has done barely anything for me (that i find visible), memory overclocking isn't that useful for me, maybe you may find a difference but i'm just a casual gamer (ok maybe not tongue.gif) and the main difference comes from GPU overclocking. Memory voltage you want to keep it at the stock voltage it came with, generally some sticks run at 1.65v but that'd be the highest i'd ever let my dimms go.
