RAM for Asus Sabertooth Z77

Hey experts,
I'm buying a new PC, picked Savertooth Z77 mobo, with a i5 3750k cpu.
Only question left, which ram to buy.
I would like to buy 2x8GB kit, with 1600Mhz freq, the question is, is this a good pick for OC with this combo?
Will it work with this mobo and cpu?

RAM is so cheap at the moment, you may as well go for a 1866Mhz kit at least.

Yeah that is the question =P I decided I want 16GB ram, with at least 1600Mhz.

I have to get 2 module RAM, am I right? Because the Sabertooth mobo supports dual-channel RAMs.
So I should get 2x8gb kit, instead of 4x4gb?
Like this : CMZ16GX3M2A1600C10

Mostly programming, running VMs.
I just got confused, because the sabertooth's QVL only contains 3 rams, so I didn't know if its compatible or not.
So last question, CMZ16GX3M2A1600C9 or CMZ16GX3M2A1600C10? What is your opinion?

PS: I checked about samsung rams here, found out that MV-3V4G3D is pretty good. Sadly It looks like nobody sells these here in Hungary =/ I guess I stay with Corsair.
