Stupid question but between GPU # 1, 2 and 3 in GPU-Z, which one should be taken as the the sole GPU temp?

Probably they all refer to the GPU, just different parts of the gpu, for example memio shadercore etc.
They are all maximum 5 degreese apart so its definetely all refering to your gpu, just take the average and thats your gpu temp.
