Get the P5B-E.

The P5B Deluxe is much better than both the S3 and the P5B-E, but for your situation I don't see much difference in a -E version than a Deluxe.

0604 and older are using elpida still.
That quote is taken from G.S Technician, if you get the 0604 kit, you pretty much lucked out any OCing (I think Elpida maxes out at 900mhz?)

i don't want to sound like a morn boredom, you guys have helped me a lot but what are you talking about 0604? i'm guessing that has to do with the memory but i can't find any reference to that number anywhere. also i read some of the reviews on the asus p5b-e and they say the jmicron controller sucks and the on board audio is horrible, and i have a ton of music i listen too. i think i'm going to stick with the gigabyte one because i have gigabyte now and i like it.

There are 2+ revisions of that G.Skill you picked out, 0604 and 0605. 0604 and below has Elipda chips in them and 0605 has Micron in them. Micron is the better OCer of the 2
