if i we're to crossfire a gigabyte windforce 3x 7970 and a ghz edition of the card will it only run at the speed of the standard card? if so should i just get another standard edition which is only £35 cheaper? or wait for 8xxx series

It'll run at the slowest speed. You can over clock the reference one, upgrade the bios to GHz edition. Or just get another regular one and OC both.

personally I´d get both gigabyte HD 7970 1000Mhz bcuz both will OC at same speed and if you want a boos tin performance use in both Ghz Edition BIOS which will let you OC it higher

Actually, this is not true. The GHZ version will run faster. Crossfire no longer is limited to the slowest card, and it hasn't been for awhile - both run at their own speed.
