It's a driver issue, It seems that X79 chipset does not play well with crossfire ; trifire and quadfire with 7970s and eyefinity. X58 chipset, according to forums is also under "attack" of poor driver support prly.
I've tested my cards on P67 system in tri-fire and eyefinity, they work greeeaat there, rock solid. I've checked and change everything except the CPU ( two x79 mobos, two sets of ram, 3hdds, drivers, windows installs, 2 PSUs, cables, adapters etc, tested each card separatly, and checked all cards on my bro's P67 system). No dice.
I also contacted AMD and wrote them what I did to troubleshoot, and I got this back:

Could the conclusion not be that Intel needs to resolve compatibility issues with Crossfire on the X79 chipset? Have you contacted Intel? Food for thought, I suppose.
Truely, the troubleshooting you have done is very thorough and accurate. It is very commendable and respected. It does, however, leave me with really nothing more to say or do for you in the way of troubleshooting. I would agree, you have narrowed down the root cause. I am not an engineer or driver developer, so I pesonally am not sure who is either responsible, or who could actually fix or 'work-around' the problem. I would think that it is something that AMD could do, though.
I would certainly encourage you to use the Catalyst Issue Reporting Form if you have not already. The more reports submitted the better, and I can sincerely say the reports are getting visibility with the correct people at AMD.

Some people got their systems working with eyefinity and all. IDK what voodoo magic they did, what driver they've updated or whatnot, but I couldn't get the damn thing working.
