It's not about being able to see everything, it's about being able to see everything clearly. The further something is from the center of your line of sight, the blurrier it is. 30" is fine for the main content of the game but if you're playing something like counterstrike, it's harder to monitor your health in the middle of a shootout when the number is all the way at the bottom left of your screen. Especially on maps like de_dust/dust2, where the yellow HUD blends in with the environment. You actually have to look at it to be able to read it. On a smaller monitor with a lower resolution that number becomes bigger and closer to the center of your vision, making it possible to read even while you're looking at your crosshairs.
Personally, I find that 30" monitors are much more immersive and I enjoy mine for that reason, but for competitive FPS gaming there's no replacement for a low-res high-refresh CRT. And I think that the FOV argument of 16:9 monitors is total BS. Sure, technically on most FPSs it'll give you a wider FOV, but I don't find that it actually makes a difference in gameplay. Maybe if you're a noob and you always run straight instead of turning and strafing as you move from area to area, but not if you're experienced enough with a game to know what you're doing. I'd take a 17" 1024x768 CRT over a 1080p LCD any day of the week.
