I am not too knowledgeable about hard carbon production, but I wonder if it is feasible to manufacture it from any carbon rich source rather than just sucrose. Would biologically unavailable sources of energy for humans like chitin or cellulose/hemicellulose/lignin be convertible to hard carbon (all polysaccharides)? If the answer is yes we could find a potential use for tons of waste.

If these go into full production that would be great! Since energy density is higher, I wonder what the charge/discharge rates are and if this new technology is volatile like Li-Po? By structure I would think not but a definite answer will still be nice.
