Why not get a component cable, use the built in digital out and the buy a component to VGA adapter? I'm not sure what to do about the sound unless you have to use the A/V cable and just use the red and white at the same time.

Oh wow. Well, at least I do have the old gamecube model, but I'm not using it.

You don't need a lot from your computer to actually get the Dolphin emulator working on it, and you'll get better resolution and some settings for the games. Generally the game experience is significantly better on the emulator, once the right settings have been found. Especially on the mainstream games.
