2500k hands down if you're going for value. don't know many ppl that would pay the extra 100$ for HT when looking for best value

The best value Intel CPU is still the i5-2500k. Cheaper than Ivy Bridge and a LOT cheaper than the i7 series.

The i5-2500k gets my vote.

My pick is i5 3570k. It is true that it has some limited overclocking potential compared to i5 2500k, but on the other hand it is not necessary to overclock it to get good performances, thus saving some money on the cooling side. Plus, I imagine it has a greater resell value since it is a newer chip

Out of the two i7's I've had (i7-2700k and i7-3770k) ignoring the prices I bought them at (sandy was much much cheaper than ivy) the ivy was the best to play with. Both OC well, however, with USB 3.0 and PCIe3.0(not really this) makes it nicer to use overall. I don't see a difference with PCIe 3.0 BUT I do see a lot of USB 3.0 usage and native support is great.

i5-2500k just wasn't as nice for some reason for me as my i7s

IMO, price per performance champion would go to the Intel Xeon 1230 V2 CPU. i7 performance at $240 though you're stuck with a locked multiplier.
