My receiver doesnt not have HDMI, IT does have spdif.

My HDMI goes straight to my projector. My receiver is a sony HTR-5560, nothing fancy but does work.

I figured out my problem with voice loudness. I was able to find a manual for the receiver and turn up the center channel. Made a huge difference.

But my sound card menu (creative) still doesnt offer 5.1 as an option, just 2.1.

He may not, but there is no harm in making the suggestion. It's always better to have more than one option. Maybe a soundcard may be a cheaper option, but not neccessarily a better one for a few reasons already outlined. Lastly AV Recievers with HDMI input/output are not really that expensive nowadays if you shop around a bit. They're fairly common now.
