Dual Channel VS Quad Channel memory kits

I cannot seem to find a good source of information on the difference between Dual, Tri, and Quad memory kits.

I'm going to be buying parts for my i7 & X79 based machine in the next week and the only part I'm still iffy on is the ram.

Currently I am considering this:

Will 2 dual memory kits work the same as a quad channel kit?

the channel of memory means if its dual..it was tested with 2 dimms..triple with 3dimms and quad with 4 dimms...all that means is it was tested to work with each other that way. 2 duals will work but some people have problems cause they werent ment to work in quad channel..
