Welcome to the world of advertised memory when it comes to SoC.
The entire phone has a total of 768 MB. The problem is, it's divided between camera, gpu, possibly radio, reserved memory for basic OS stuff, and finally user addressable ram. Your reported 563MB is normal, don't worry.
But remember this when it comes to advertised ram on phones/tablets/anything that uses a SoC (system on chip), they CAN and WILL advertise the size of the ram built into the system, but the amount you see will be less.
