right now i have 1 1080p monitor and im wondering if i should get one big 27 inch with a 1440p resolution or buy 2 more 1080p monitors for surround. all the monitors will be ips and the cost of one big monitor is about the same as two of the smaller ones. I also got a gtx 680 for my gpu

Desktop wise you'd probably benefit more from going 1440p if you also could keep your current 1080p monitor on the side. You'd still have multiple monitors of room but one would be of significantly higher resolution, which helps immensely on the desktop if you're multi tasking.

Gaming wise I'd usually recommend larger single monitor setups over small multi-monitor setups. The added vertical height, increased resolution, and added ease over the occasionally wonky support of surround often make for a more comfortable setup for most types of games. Though the surround would probably be nicer if you were playing racing games or simulators.
