I didn't care for Windows 8 at first, but now I like it a lot. In my opinion, Windows 8 edges out 7 due to how fast and lightweight it is. It's got the speed and snappy feel of Linux with the usability and huge software/device support that comes with Windows.

I don't like Metro at all, and I'd be really happy if MS were to re-add the Start menu back, but as of right now I think the increased overall responsiveness of the OS makes the loss of the Start menu a decent trade-off. The new Ribbon is handy, and I like how each icon has a checkbox for multi-selecting.

Once I got Classic Shell it basically became Windows 7 for me, only better. Super fast boot times/restarts with an SSD. The only issue I'm having is getting some of my games to work on Steam :/

Win 7 edges out slightly for me, as Win 8 feels a bit clunky and disjointed for my taste. There are a lot of things I like about it (for example sticking the ribbon onto the explorer UI: I never expected I'd like it but I really do) but I just find the start screen a hassle to use due to the way it segregates program, file, and control panel search results. Whereas I could simply type "dev man" and hit enter in W7 to open that control panel (before the search results even appeared, no less), in W8 I have to type out my search, hit down arrow twice to highlight "control panel", hit space to select it, THEN mouse over to the search results area and pick out the item I want to open. It's more frustrating when I'm not sure whether the thing I want is a program or a control panel.

I don't know if it's a deal breaker on its own, but things like that are really keeping me from liking W8 more than I could be.
