windows xp files restore to windows 7 pc

My built computer had a third mobo failure. I rely on my computer for my businesses so I broke down and ordered a factory assembled pc with Windows 7.
I need to load a few softwares and its data into the new pc. Most were saved to the desktop. What would be the easiest and surest way to obtain these on the new OS?

For data files, then just make the Windows XP hard drive as a second HD and then manually copy over the files. Or you can make stuff Windows XP HD into a compatible external hard drive and then manually copy over the files. For installed software though you need to re-install them again in Windows 7.

You can also remove the hard drive with Windows 7 on and and plug-in the drive with Windows XP and then hope for the best. Some people here have claimed that it worked for them but YMMV.

After reloaading the softwares, how do I transfer existing documents and settings from the old software.
One software had a list of unpaid invoices and balances owed.
