Is the game fully patched/up to date? Skyrim was terrible for GPU usage when it came out (major CPU bottlenecking issue due to a lack of CPU optimizations) but it was fixed by a Bethesda patch. 50-60fps is definitely low for Skyrim with SLI 680's if it's up to date.
