Processor for capturing uncompressed 1080p30 - C-60, D510, Celeron 743?

Been a long while since I've posted here (except for last night). I'm looking at making a capturing station for video camera work. I want to capture uncompressed 1080p30 from the cameras. I've done my homework and know what I'm getting into and aware of the bandwidth and space required. Now here's the thing. I want to do this as portable as possible and looking at mini ITX boards.

Will a 1 GHz single core, up to a 1.6GHz dual core, handle this? It won't be doing any compression, so it's just handing off the info to the RAID array. The CPU will be managing the RAID array though.

Processors I'm looking at are as follows -
Celeron 743 1.3GHz single core
AMD C-60 1GHz dual core
Atom D510 1.6 dual core

Each setup will only be capturing one camera. Could cut down on bandwidth and avoid RAID, but that would require real time compression using something like DNxHD (must be cross platform compatible). Real time compression will require mo powa. Mo powa = mo $$$ and mo electricity.
Trying to keep this as low cost, and as portable, as possible.
