The Samsung has TLC NAND and the Sandisk Extreme has higher IOPS count, the XFX 550W unit is recommended by OCN and will be more than enough for your rig, and a 7950 which is a significantly more powerful cards than the 660 Ti and has more memory bandwidth.

Ok, so I tried to read through Sean's SSD guide and I'm a bit confused about TRIM, is it something I have to enable in windows? I'm also looking at the Crucial M4 as Ive seen its a reliable drive

The Crucial M4 is a solid, dpeendable drive, although it is a bit slower than the newer models (not really noticeable in anything other than benchmarks though). TRIM should be enabled by default if you are using Win 7.

So Ive ordered my parts, Should I update the BIOS and the firmware on the SSD first?

Also, what are some programs I should test with, Ive heard of Prime95

It's usually good to update everything you can on the SSD. Also, definitely update your motherboard bios too. Try to get the newest drivers for everything else as well.

If you plan on overclocking; Intel Burn Test, LinX Linpack and Prime95 are all good stress testing programs to use.
