Thinking about this,always brings to mind one game,then another pops up,then another one,can´t ever decide wich one i like the best,so heres all of them in no particular order :
The first Deus Ex (Doesn't need any introduction)
Omikron,the Nomad Soul (Might be a little unknown,was the first game by Quantic Dream,a "open world" scy-fy adventure game,featured a soundtrack by FREAKIN' David Bowie,wich even appeared and gave voice to a character ingame,btw,still waiting for a promised sequel Quantic Dream,not just console games....)

Elder Scrolls III-Morrowind (Without a doubt,the best soundtrack of the series imo,used it on Oblivion and using it on Skyrim
The second Deus Ex, Michael McCann doesn't disapoint
Outcast,a game wich most new generations never heard of,always comes to mind whenever i think about game soundtracks,came out in 99 by Appeal and released by Infrogrames (later turned into one of the Atari's),was one of the first open world experiences in gaming for me,and the orchestral score it had,performed by the Moscow Symphony Orchestra,just blew my mind at the time,i still feel shivers down my spine everytime i hear one of the songs.
Unreal Tournament 99 (the original one), the ost was plain groovy, I even ended up ripping a few tracks and using them in trance and drum n' base (Facing Worlds anyone?) mixes back in the day. I also really really liked the opening riffs of Quake's main theme.
At the time it was made, Shadowrun for Sega Genesis had awesome music.
Later on, Final Fantasy 3(6) for SNES upped the bar.
Then Command & Conquer picked up Frank Klepacki, and he set the bar even higher.
The Elder Scrolls have legions of musically gifted fans who create lovely remakes of songs found in-game. Morrowind, Oblivion, and Skyrim all have great music, but only some of it is great in-game (the menu for Skyrim, and the intro for Oblivion are both exceptional).

donkey kong country (snes)
secret of mana
elemental gearbolt (had a few i liked a lot)
and... im sure there were more but cant think of them right now hehe
