If you have two different resolutions, it will always scale all monitors to the resolution of the lowest monitor. 2 screens is perfectly possible on that 6870 (I did did hat for a while) but I wouldn't recommend it because like already mentioned, you would have a bezel in your way.

Ok from what iam reading on the internet you cant just run 2 monitors on windows 7 for some reason!? It works fine on xp and vista but not on windows 7! Does anyone know if this is true and if there is a fix for it? They said there is a device called (matrix triple head) but the only problem is it costs like 300-400 dollars-way outta my price range! I wanted to use 2 1900x1080 monitors to game on but i wanna make sure i can do it

Not true. I have 7 and ran two monitors just fine. The Matrox Triple Head converter is only for systems which can't handle a lot of monitors in games. Any 30$ card can handle 2 monitors.

 

EDIT: Here's an example of what I found on the interwebs, only using the graphics card, no Dual/Triplehead.
