This isn't supposed to happen, Xbox/PS3 games should be bug-proof since there's no access to any kind of console commands.
Do any of your friend have a copy of it? Or are you able to try the disk on another console?

That could help to identify the cause.

Did you just restart the console or restart a new game? You could try deleting cache files, then restarting your game from the beginning. http://support.xbox.com/en-US/xbox-360/settings-and-initial-setup/clear-system-cache.
If that doesn't work, you can also delete any saved game data form Skyrim and restart. http://support.xbox.com/en-US/games/manage-games-data

Just realized this thread is kind of old doh.gif. The solution could still work though.
