Also if you have only one 560 Ti currently and want to upgrade, I guess a new single-card GPU will be better.

He did manage to show the two different cards running in SLI. But he doesn't show any before and after scores. In SLI you will run as strong as the weakest link, i.e. if one card is 300 and the other is 190 then both cards will run at 190 I believe. I'm not even sure if what was done had any benefit at all.
As far as the single card gpu is best is concerned. SLI has come a long way. SLI was problematic long ago (SLI has been around since VooDoo2) but is many times better today, and depending on what games you want to play can even be a requirement. I have had two different SLI setups, SLI 275s, SLI 480s, and soon SLI 670 FTWs. I never had any problems whatsoever with SLI.
Deciding on a SLI setup has several factors, how much money you have, and what your money will get you. If you already have a 560 ti and can pick up another dirt cheap, than it may be worth it. But if you have enough money for something more powerful that will beat the SLI setup than you should do that. But the 560s have less vram than the 6xx series, and vram is starting to become important to a point.
My advic would be to get yourself something like a 670 or 660 ti, and if you still need more power down the road you could go SLI
