WS 2012 Backup

I have Windows Server 2012 Essentials and I'm confused about how the backup works. I have my computer set up with an SSD as the OS, and 4 3TB HDD for the storage. I want to set up a backup for two client computers, and also the server. For some reason, it makes you do special formatting for the HDD's in order to back it up.

Another thing is that I'm not sure what format the backup is in. I thought it would be an image, but all the files I see when I browse to the client backup folder are multiple small DAT files. Does the backup built into 2012 allow me to browse the files I backed up, and individually extract and use them (similar to Acronis True Image .TIB backup browser)?

There are different types of backups and imaging. Check to ensure you're using the right backup option.
