Do you have the 3gb 580's or the 1.5? I have three 480's running @ 900/2200 on an EVGA X58 Classy Three way and Tri sli has a noticeable stutter to it in a lot of newer games (even staying below the 1.5 Gb VRAM limit). I've tried everything to tweak it but no avail. However, I am running 5970x1080 surround with three monitors. Single monitor I didn't see much of an issue.
I had two 670 FTW 4gb cards in SLIin before the 480's and I can say the 670's were much better (had mine running @ 1250/7400). You CPU is not going to bottle neck a single Titan per say (loose a few FPS in benchmarks of course). My two 670's weren't bottlenecked by my i7 920 running @ 4.3 Ghz compaired to newer platforms (they were a few FPS faster). So unless you are gaming in surround maxed or 1600p resolutions the 670's would be a much better option. The only reason I'm going to SLI Titans is because I'm building an SR-2 overkill rig for gaming/folding and I play all of my games in surround (I'd like to avoid tri SLI at all costs) and the Titan fit my needs... even though I gave up my left nut to have them lol but you have to pay to play.... more so when playing on triple monitors
My $.02, I'd sell the 580's and pickup two 670's
