I am doing a lot of video rendering and I believe that there is a difference when you're using the GPU acceleration for that...I could be mistaken though. I don't mind using more money for the time being, I can always give it to a friend or to someone on the forums when I don't need it any more. I am not even sure if there is going to be a space issue but from what I see online there are many different kinds with very slight differences in length. The last thing that I want to do is spring a leak so i'm trying to find someone that has done this particular build or is certain of what will work. I don't think the board PCIe spacing is any different than any of the others, i'm more worried about the blocks placement.

fyi, gpgpu applications use even less bandwidth than gaming so no worries for having one of your cards being 8x.

hydro copper has top-bottom threaded and I don't see any reason why this doesn't work. It is adjustable up to the length btw 4 slots.

Don't order hydro coppers. You're paying $200 for a $100 waterblock and still getting an average stock overclock. Get a MSI GTX 680 Lightning for $499 and an EK Lightning full cover for $115 (x2 for SLI). Then you can slap on the included EK FC Links and buy the EK serial bridge and be good to go. Just throwing it out there:

I actually already got 2 of them, 600 bucks a pop (4gb classified). basically free waterblocks. I MIGHT end up changing the waterblocks eventually to something else...but most likely I will just wait until the 780 classy's come out.

These in the quoted link will work perfect, look clean and match the black of the hydro coppers. I would just order some extra bitspower red O-rings to replace the green ones. If you were using colored coolant I'd definitely suggest crystal links instead.
