I wouldn't worry too much about that. The change from x16 to x8 is 1-3%, enough to be negligible. There are some benches testing this, and considering they were made on "old" hardware, the sheer power of what you got will make the difference even more unnoticeable. You can check the x16/x16 vs. x16/x8 and the x16/x16 vs. x8/x8 benchmarks. The "worst case" would be comparing x16/x16 vs. x4/x4, and even then, it isn't that bad (and you would be hard pressed to find a motherboard doing x4/x4).

I'm running a 7970+7950 on x8/x8 slots (because i was stupid enough not to get the appropriate four slot Xfire connector for my loop, so i was left with using a 2-slot one) and i'm doing more than fine on a single monitor.
