GPU-Z & MSI Afterburner monitors VRam usage, you can also get live in game update with MSI Afterburner OSD.

SLI will not fix VRam shortage as Vram in a SLI is Mirrored, not added. Thus a pair of 2GB 680 in SLi still only have 2GB of VRam.

****, so am i screwed for Surround now? i do have the card already and 3x 23.6' monitors and i run surround for BF3 currently. any recommendations to make this better?

go for the 4gb, its more future proof, overclock it to the top speed, i have mine at 1280, and no problems, and is 2 slot, best for sli
games like arma 3, skyrim, max payne and others, always pass the 2gb vídeo ram, and future games.

Yeah go the highest clocked 2gb you can afford as there is no need to get the 4gb card @ 1080p.
