Single GTX 580: Is SLI the best upgrade path for me?

I am currently gaming on a single 1920x1080 monitor, but I will most likely be purchasing a 27" 2560x1440 IPS monitor in the near future -- I have been heavily considering the 120hz Overlord models (though their pre-orders just ended).

Would adding a second GTX 580 (1.5 GB) be the best increase in performance per $ spent for my setup?

Is 1.5 GB of VRAM enough for 2560x1440 in most games that are already out (with AA off)?

My GTX 580 currently gets to around 64°C while playing games, would I need additional/better cooling for SLI?

Additionally, I believe my power supply is sufficient for the task of running GTX 580 SLI (as I had the idea to upgrade this way when I bought it), but I would like to know if having it running for roughly 80% of 1.5 years has any effects of which I might be unaware?

Lastly, would waiting for the 700 series be the most prudent option? Does it seem likely that anything in the 700 series will outperform GTX 580 SLI without spending hundreds of extra dollars (after selling what I currently have)?

Yes. Adding another 580 would definitly increase your FPS@1440 but at what price. As far as I know, newer one's sell for ~200$. At which point I would probably sell my current one, add 150$ and get myself a GTX 670 4gb versions. It would be not as powerful as an sli 580, but would save me dual GPU trouble and power.

You PSU should be fine for 2 580's.
It is a very cheap way to add a lot of power to the system. I just bought a 2nd 580 for my system. 2 nicely clocked 580s are on par with a single titan. Not much has been said about the 700 series yet, aside from the "titan jr" rumors flying around.
1.5gb versions may be a little short on vram for 1440p, but the only game that comes close to using 1.5gb for me is modded skyrim at 16x10

I'm in the same boat. I do think SLI is the best option for me, except I'm being rather picky about what card I'll take because I want it to hit the same overclock as my current one (950 / 2200).

2 GTX 580s will beat a GTX 680 and the only cards that are faster are the GTX 690 and the Titan. Your psu should be fine, and 1.5GB of vram is still enough for a single monitor in most situations. I would definitely go SLI if you feel you need more power now, but why don't you get the monitor first, and see if you even need to upgrade right away? If your card plays all your games well enough, you may as well just wait for a 7 series. If nothing else, by then, another GTX 580 will be cheaper. But if your games are struggling, just grab a 580 right away for SLI.
