New to surround (3 monitors) had a question or 2

Hey so I am ecstatic that I am finally able to play games using 3 monitors. they are 1680x1050 sadly but meh i got 3 22" acer monitors for $15 ea and an Inland Pro HT triple stand for $69. I have dual GTX 480. I Have everything thing setup and it works great. However I was wondering a few things

#1 the menus in Borderlands 2 are so enlarged that i cant see a lot of it. namely my character select screen.
#2 is there any way to adjust it so that my left and right screen don't seem stretched? in BF3 i notice it seems to stretch and zoom/enlarge/magnify whatever is on the left and right screen. BUT if i zoom in with a gun they look normal.
#3 I play EVE Online. I also have 4 accounts. when I have surround enabled i can only set the game to either use 1 screen or all three screens as one. i would like to be able to use 1 account per screen WITH SLI enabled. but so far the only way to achieve this is to disable surround, however that also disables my SLI which makes the games stutter more. I use to have no problem running 4 accounts 2 pear each screen when i was just using dual monitors and it allowed me to keep SLI enabled.

any other tips or knowledge would be great

I may able to answer your #3 question.
SLI/CF only supports full screen mode and if you have 3 separate windows, it wouldn't be full screen mode, so it will disable SLI automatically.
Are you sure you were able to use SLI in dual monitor? If you have msi ab or gpu-z, see if both GPU1/GPU2 are using close to 100% usage.
