Actually, they both have a 8+2 phase system. Both have Asus' DigiVRM as well. Both will overclock very similarly.
If I had to choose one of those two today, I would probably go with the sabertooth. Longer warranty and it has a few bells and whistles the CHV does not.
However, if you are open to other boards besides the two, Give the Gigabyte 990fxa-ud5, Gigabyte 990fxa-ud7, and AsRock 990fx extreme 9 boards a look as well. All 3 are solid choices.
I myself do run a Crosshair V. The board has been great. I have no complaints about the product itself...... but..... if I would have known that I'd be battling Asus for almost 2 months trying to get a fully functional un-damamged motherboard when I RMA'ed my original board for a bad cpu-fan header, I never would have purcahsed it.
I would've probably go with the Giga UD7 or AsRock extreme9 over all above choices if I had a redo.
