There is just diminishing returns on covering the edges as all the heat is made in the middle of the CPU. Having the edges covered is not going to hurt anything. You may get slightly less pressure on the middle because of the paste not being able to flow out from the middle when the block is tightened down but I doubt it.

really what sold it for me was the amount of air pockets the spreading method generated. the pea seemed to spread perfectly evenly with no bubbles in the glass demonstration

Cut turned out great.

I used to do the spread method but not any longer. The stiffer pastes don't like it and they do create air pockets resulting in uneven temps across the cores. I've been doing the "X" in the center.
