Intel Burn Test is great if you just want to know the maximum theoretical temp, I use Speccy
usually and just sit and wait to see what the maximum temperature is after 10 or so burn tests. You can get programs that will record over say 10 hours the highest temperature. (RealTemp, etc)
If you're doing it over a few hours I'd try Prime 95 and do a custom blend. (You'll see what I mean when you open it) and set it to use 90% of your RAM.
With the temperature sensor programs (Laptops more-so) you need to check a few and see what works best for your setup, I know speccy worked great for me on my EP45-UD3P + E8500/Q9400, but my 3570k rig reports better with other programs such as RealTemp.
