Checking for stability

I have a 3969x in rampage IV extreme with corsair memory 2gig x8 = 16 gig ddr3 memory. The memory is 2000ghzbut is under clocked to 1333 in the bios OC.

I have 240ml water cooling with 3 additional fans to extract hot air.

My video card is gtx680 with 4 gig memory.

I use this PC only for FSX and addons. This is part of a full cockpit.

I overclock in bios, set 48 multiplier with 1.4v vc ore.

How do I check if system is stable? I open occ and run it for 5 minutes at full load and my temp reaches 63c. But what's the magic number to look at to say with confidence: "my system is stable enough at this clock speed"?

For the cpu I run prime95 for about twenty minutes or so then fold overnight with it. For the gpu run heaven bench a few times. Then play something like crysis for a while.
