2 7870's or 7850's or 660's are better price / performance than a 7970, why didn't you go for alternative CF or SLI solutions over your 7970?
Two 7850s are 20% faster than a single 7970. You lose decent double-precision compute, and you can't add another card later if you want to. Then there's all the other traditional drawbacks of multiple GPUs.
Two 7950s, especially when overclocked, would be a hell of a lot faster than a single 780. Sure, you'd have to deal with all the normal multi-GPU drawbacks (including: power, heat, noise, compatibility with some very new games, possibly microstutter), but you get... if I had to guess, over 50% better performance on average, though that's just a rough guesstimate.
